In the north-eastern part of Sardinia, between the valleys of Padru and Berchideddu, in the hinterlands of Olbia city, is located the high plateau of “S’Ena de sa Pira”, the century old gathering point for the spring time migrations of cattle herds. This high plateau, 700 meters above sea level, is home for green grass wide prairies and golden hay, surrounded by uncontaminated wild nature, reign of Corbezzolo, myrth and Erica flowers. This scented “mediterranean macchia” transfers to the milk all its unique flavours, which are a strong and constant characteristic of the dairy products of this farm.
Hand made, craftsmanship production systems are the sole methods adopted here.
Top quality raw materials, natural and uncontaminated area, non-intensive production systems which respect the century old traditions, are the main ingredients resulting in cheeses of incomparable genuineness.
This cheese cream is made using solely craftsman aged sheep cheese and “ricotta” fresh cheese, without any preservative nor corrector.
The heart of a full sheep cheese is placed together with the ricotta cheese into a specific machine which melts the ingredients through water steam, and further emulsions it into a soft, homogenous cream, which keeps unchanged all the characteristics of the 100% natural sheep cheese from which it originates: genuineness, perfume, full and intense taste with straight spicy tone of the aged craftsman sheep cheese. Here is a true delicatessen to relish spread on crusty bread slices, accompanied by a craftsman red wine, such as our Calamaera vintage 2005 (see our wines list).
